Soup-Tacular

This is one of my favorite soups, it really makes a lot and freezes well if need be. It is a very easy soup to make all you need to do is mix everything together and put it in the crockpot for dinner. I have to say this recipe came from my good friend Vicki, so I can't claim it as my own.

You can head over to BooMama for more soup-tacular recipes.

I hope that you enjoy!

Chicken Tortilla Soup

2 cans of cream of mushroom
2 cans cream of chicken
2 cans cream of celery
2 cans cheddar cheese soup
2 15 oz. diced tomatoes
1 cup pace medium picante salsa
1 4 1/2 oz. can green chilies
1 mdium onion chopped
4 cloves fresh garlic minced
1 t. red chili powder
salt and pepper to taste
1/2 cup fresh chopped cilantro
4 cooked chicken breat cut into small chunks ( you can use 1 lg. can of chicken to save time)
1 package flour tortillas
1/2 lb. longhorn style Colby cheese

Combine and whisk together the 8 cans of soup. Add chicken broth and tomatoes, salsa, chicken, green chilies, onion, garlic, chili powder, salt and pepper. Cook on low for 6-8 hours

Before serving cut flour tortillas into small thin strips deep fry in hot oil until slightly brown. Shred chees and top soup. You can also use tortilla chips in place of the flour tortillas.

**This recipe can also be cut in 1/2 to make a smaller amount, but remember it does freeze well!
